Roasted plantain (bole) with vegetable sauce is an old traditional Nigerian dish made with modern flair. Addictively delicious! Lol. You can make roasted plantain popularly known as bole at home, here’s the recipe below!
Ingredients
- Ripe/semi-ripe plantain (desired quantity)
- Pumpkin leaves (ugu). Spinach, as substitute
- 1 large onion, sliced
- Palm oil
- Dried fish, smoked mackerel
- Fresh hot peppers
- Fresh tomatoes
- Cooked assorted meats (optional)
- Shrimps and Prawns (optional)
- Seasoning cubes (Maggi/Knorr)
- Ground crayfish
- Salt to taste
Method
- Peel the plantain. Rub plantain with olive oil, sprinkle with salt and dry ground pepper. Roast and grill with oven or barbecue. Or use local means of firewood. Roast until plantain is thoroughly done – deliberately allow to burn a little to give that sweet-smokey flavour.
- Roughly and coarsely the blend hot pepper, tomatoes and onion.
- In a cooking pan, heat up palm oil. Once oil is ready, then add sliced onion and stir-fry for about 2 minutes. Stir-in the blended pepper mixture, then add crayfish, seasoning cubes and salt to taste. Leave to simmer for about 10 minutes – don’t forget to stir every now and then.
- Then add the dried fish and smoked mackerel. Add cooked meat, and the shrimps and prawns (if using any). Stir and combine well. Taste, and adjust seasoning and salt if required. Allow to simmer for about 10 minutes.
- Add the cleaned and chopped leaves. Stir and allow to simmer further for about 2 minutes. Turn off heat as the vegetables continue to cook with the residual heat.
Serve roasted plantain with the vegetable sauce. Enjoy!
