Ingredients
- 4 chicken breasts, halved
- 2 garlic cloves, crushed
- 1 tbsp Cajun seasoning
- ¾ tsp crushed chillies
- 1 tbsp Ground coriander
- 1½ tbsp olive oil
- 1 tbsp Ground cumin
- Salt to taste
- 4 burger bread (burger buns), halved
Coleslaw
- 1 carrot, grated
- 50g Greek yogurt
- 1 tsp Dijon mustard
- Little gem lettuce, shredded
- Small red cabbage, shredded
- 1 garlic clove, crushed
- 2 medium tomatoes, sliced
- 1 Lime (juice and zest)
Method
- Bash the chicken breasts so they are an even thickness. Mix the spices together (salt, cumin, coriander, crushed garlic, and chillies/hot pepper), then roll the chicken until each piece is evenly coated. Leave to marinate for at least 10 mins.
- Oil the bbq grill, a griddle or a large frying pan over a high heat. Place the chicken in and evenly cook each side, until the chicken is cooked to your desire.
- Meanwhile, put all of the coleslaw ingredients in to a bowl. Season well and mix until fully combined. Set aside, to be used for serving.
- Assemble your burger, put the grilled chicken burger into the bread and top with the coleslaw.
