Ingredients

- 6 bone-in chicken legs
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon Foodace grill mix
- 1 onion, diced
- 4 cloves garlic, minced
- ½ teaspoon salt
- ¼ teaspoon pepper
- ½ teaspoon ginger powder
- ½ teaspoon paprika
- ½ teaspoon dried basil
- ½ teaspoon dried oregano
- ½ leeks, sliced
- ½ cup fresh cilantro, chopped
- 2 lime, halved
- 1 fresh tomato, diced
- 1 celery, chopped
- 1 green bell pepper, diced
- Salt, to taste
- Pepper, to taste
Method
- Preheat oven to 200˚C.
- In a large bowl, season the chicken with Foodace grill mix, salt, pepper, garlic powder, paprika, dried basil, thyme and dried oregano. Mix until thoroughly coated with the seasoning.
- Heat olive oil in a grill cooking pan and place chicken legs in the hot oil. Cook for about 3-4 minutes or until the thighs develop brown crispy skin, and flip over. Cook for extra 2-3 minutes to brown the other side, and remove from the pot.
- Add garlic, stir until fragrant, then add some thyme, and oregano, and stir. Reduce heat to low.
- Add all the vegetables, and mix together.
- Return chicken to the skillet. Mix until thoroughly coated in the sauce.
- Add lime wedges to skillet.
- Bake/grill for 30 minutes or until chicken is cooked through.
