Puff Puff is very popular Nigerian snack, a legendary street food in the nation. It is made from flour and can serve as a side dish. Read on to learn how to make the ultimate Nigerian Puff Puff recipe.

Ingredients

  • All-purpose flour
  • Yeast (same as one used in baking bread)
  • Sugar
  • Salt
  • Warm water
  • Vegetable oil (for deep frying)

Method

  1. In a bowl, mix salt, sugar, water, and yeast. Set aside for 5 minutes.
  2. Add flour and mix. Cover bowl and allow the mixture rise for about 1 hour.
  3. Heat up oil in a deep pot or frying pan. The oil should be about 3 inches deep. This allows the puff puff to be in round shape in the oil.
  4. Drop a batter of dough in to test that the oil is hot enough. If it sizzles and comes up to the surface of the oil, then the oil is hot enough. If it is not hot enough, the batter will stay at the bottom of the pot.
  5. When oil is ready, use your hand to be scooping a little bit of batter at time and drop in the oil. Put in more scoops of the batter, but allow space in the frying pot will allow without overcrowding. Fry in batches.
  6. When the oil is hot enough, use a spoon to dish up the batter, and another spoon or spatula to drop it in the oil, sort of in the shape of a ball.
  7. Flip the puff puff once the underside has turned golden brown. Fry for a few more minutes until the other side is golden brown.
  8. When it fries completely golden brown, take out the puff puff balls and place in a sieve. Place the napkins or paper towels in the sieve. The napkins will soak up some of the excess oil.

Serve and enjoy with your favourite chilled drink. For extra, you can roll the finished product in table sugar or powdered sugar to make it sweeter, if desired.
